Nose: Very intense, alcoholic, pungent, loaded with aromatic esters. Ripe dates, sweet tropical fruits, chocolate and cigar boxes.
Palate: Dry and clean, with a very restrained winey influence from the sherry casks. Sultana raisins, fermented fruits and again high estery intensity, but with a sharp and not sweetened profile, very spicy. Pepper and cinnamon galore.
Finish: Spicier and spicier, building up in heat and intensity.
Comment: Briefly aged in the Tropics and then in a continental climate with the use of second fill sherry casks, this blend of fatter rums from a 250 years old wooden pot still and lighter ones from a double wooden column still retains all the richness of Demerara sugarcane.
